How to Make a Vibrant Mixed Pickle Salsa or Relish
Give your salsa a thrilling twist by using mixed pickle as the base.
Drain 1 cup of mixed pickle, reserving the brine. Finely chop the vegetables. Combine them with diced fresh tomato, onion, coriander, and a jalapeño. Add a tablespoon of the reserved pickle brine and a squeeze of lime. Mix well.
You now have a salsa/relish with incredible depth—it’s fresh from the new vegetables, but deep and complex from the fermented, spiced pickle. It’s incredible with chips, on tacos, or with grilled fish.
